I spent weeks feeding my starter, kneading dough, and wrapping warm, crusty loaves of sourdough to give as gifts to friends and neighbors. It’s one of my favorite ways to say “I love you”—a gift that takes time, patience, and two hands to make.

But as every sourdough baker knows, a busy baking season means a lot of discard.

Rather than tossing it, I wanted to turn that “leftover” into something intentional for a quiet morning at home. The result? These Sourdough Discard Chocolate Chip Scones.

They are tender, flaky, and just sweet enough. When I pulled the first batch out of the oven, my husband took one bite and said they were his absolute favorite. We loved them so much that I started doubling the recipe immediately—because with a hungry family during the holidays, eight scones just isn’t enough!

The Dry Mix

  • 500g all-purpose flour (4 Cups + 1 tbsp)
  • 1 cup granulated sugar (200g)
  • 4 tsp baking powder 
  • 1 tsp salt (5g)
  • 1 cup cold unsalted butter (2 sticks / 226g), grated or cut into small cubes

The Wet Mix

  • 1 cup sourdough discard (250g) — unfed, straight from the fridge is fine
  • 2 large eggs
  • 4 tbsp heavy cream (¼ cup or 60g) — plus extra for brushing
  • 4 tsp vanilla extract (20g)

The Mix-ins

  • 2 cups semi-sweet chocolate chips (12 oz) — one standard baking bag
  • Turbinado sugar (for sprinkling on top)

Step-by-Step Instructions

  1. Prep the oven. Preheat your oven to 400°F (200°C). Line two large baking sheets with parchment paper.
  2. Whisk the dry ingredients. In a very large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. Cut in the butter. Add the cold butter to the flour mixture. Use a pastry cutter or your fingers to work the butter in until the mixture looks like coarse crumbs. Tip: If you grate the butter, freeze the sticks for 10 minutes first—it makes it much easier!
  4. Mix the wet ingredients. In a medium bowl, whisk together the sourdough discard, eggs, cream, and vanilla until smooth.
  5. Bring it together. Pour the wet mixture into the dry ingredients. Mix gently with a fork until a shaggy dough begins to form. Fold in the chocolate chips.
  6. Shape the dough. Turn the dough out onto a lightly floured surface. Since this is a double batch, divide the dough in half. Gently pat each half into a separate circle, about 1-inch thick.
  7. Cut and bake. Slice each circle into 8 wedges (for 16 total scones). Place them on the prepared baking sheets, spacing them out. Brush the tops with a little heavy cream and sprinkle generously with turbinado sugar for that bakery-style crunch.
  8. Bake. Bake for 15–18 minutes, or until the tops are golden brown. (If baking both pans at once, rotate them halfway through).
  9. Enjoy. Let them cool on the pan for 5 minutes before serving warm.
